Chocolate Cream Pie with Whipped Cream

I used 1.5 times the ingredients to make a thicker layer of chocolate and doubled the whipped cream recipe for the same reason when using deeper pie dish.

Pie Ingredients:

3/4 cup sugar
1/3 cup cornstarch
2 squares unsweetened baking chocolate, cut in small pieces
1/2 teaspoon salt
2 1/2 cups milk
3 egg yolks, beaten
1/2 teaspoon vanilla extract
2 tbs butter

Combine sugar, cornstarch, chocolate, and salt in pot. Stir in milk. Cook mixture stirring constantly until chocolate mixture has thickened.

Gradually stir about a cup of the hot chocolate mixture into beaten egg yolks taking care not to cook the yolks; return egg mixture to pot, stirring well. Stir mixture a few minutes to thicken. Remove from heat; stir in vanilla extract and butter. Pour filling into a baked pie shell (see Jean M. pie crust recipe).

Whipped Cream Ingredients:

1 cup heavy cream
1/4 cup sugar
1 teaspoon vanilla

Whip cream until almost stiff. Add sugar and vanilla; beat until cream holds peaks. Spread over top of cooled pie.
